A rich and creamy Tuscan-style soup made with hearty potatoes, tender kale, Italian sausage, and a savory parmesan-infused broth.

- 1 lb Italian sausage (mild or spicy)
- 1 tbsp olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 3 cups water
- 4 medium russet potatoes, thinly sliced
- 2 cups chopped kale
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Crushed red pepper flakes (optional)
Instructions
- In a large pot, heat olive oil over medium heat and cook the Italian sausage until browned. Remove and set aside.
- In the same pot, sauté the diced onion until translucent, about 5 minutes. Add minced garlic and cook for another minute.
- Pour in chicken broth and water, and bring to a boil.
- Add sliced potatoes and cook until tender, about 15-20 minutes.
- Return the cooked sausage to the pot and stir in chopped kale. Cook for an additional 5 minutes until kale is wilted.
- Reduce heat and stir in heavy cream and grated Parmesan cheese until melted and combined.
- Season with salt, pepper, and red pepper flakes to taste.
- Simmer for 5 more minutes before serving hot.
Notes
- For a thicker soup, mash some of the cooked potatoes before adding the cream.
- Use turkey sausage for a lighter version.
- Freshly grated Parmesan melts better and adds more flavor than pre-grated.
