A fun and colorful dessert, mini fruit pizzas are made with soft sugar cookie bases topped with sweet cream cheese frosting and fresh fruit. Perfect for parties or a light treat.
Ingredients
- 1 package (16.5 oz) refrigerated sugar cookie dough
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1/2 tsp vanilla extract
- 1 cup sliced strawberries
- 1/2 cup blueberries
- 1/2 cup kiwi, peeled and sliced
- 1/2 cup mandarin orange segments
- 1 tbsp honey (optional, for glaze)
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Slice cookie dough into 1/4-inch rounds and place them on the prepared baking sheet.
- Bake for 8-10 minutes or until edges are lightly golden. Let cool completely.
- In a medium bowl, beat cream cheese, sugar, and vanilla until smooth and creamy.
- Spread a layer of the cream cheese mixture on each cooled cookie.
- Top each cookie with an assortment of sliced fruits.
- Optional: Brush the fruits lightly with honey for added shine and sweetness.
- Chill for 15 minutes before serving. Enjoy!
