Description

This Roasted Potato & Sausage Hash with Spicy Tomato Butter is a bold and comforting dish that combines crispy roasted potatoes, savory sausage, sautéed veggies, and a rich, spicy tomato butter drizzle. Perfect for brunch or dinner when you want big flavors in a single skillet.

Ingredients

Potatoes:

  • 3 large potatoes (Yukon Gold or Russet), diced into ½-inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon paprika

Sausage Hash:

  • 1 pound Italian sausage, sliced
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced

Spicy Tomato Butter:

  • 1 can (14 ounces) diced tomatoes, drained
  • 4 tablespoons unsalted butter
  • 1 teaspoon red pepper flakes (adjust to taste)

Garnish:

  • Fresh herbs for garnish (e.g., parsley or cilantro)

Instructions

  1. Preheat Oven: Preheat oven to 400°F (200°C).
  2. Season Potatoes: Toss diced potatoes with olive oil, salt, pepper, and paprika in a bowl.
  3. Roast Potatoes: Spread on a baking sheet, roast for 20 minutes until golden and crisp.
  4. Cook Sausage: Brown sausage slices in a skillet over medium heat.
  5. Sauté Veggies: Add onion and bell pepper, sauté until tender.
  6. Add Garlic: Stir in garlic and sauté briefly.
  7. Combine with Potatoes: Add roasted potatoes to skillet, mix well.
  8. Make Spicy Tomato Butter: Melt butter, add tomatoes and red pepper flakes, simmer.
  9. Finish the Dish: Drizzle tomato butter over hash, toss to coat.
  10. Garnish and Serve: Garnish with fresh herbs and serve hot.

Notes

  • Swap Italian sausage for chicken sausage or chorizo for a different flavor.
  • Add eggs on top and bake for a breakfast-style hash.
  • Adjust red pepper flakes to control the heat level.
