- 4 boneless, skinless chicken breasts
- 1 packet taco seasoning
- 1 cup salsa
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (4 oz) diced green chilies (optional)
- 1/2 cup chopped onion
- 1/2 cup chicken broth
- 1/2 cup shredded cheddar or Mexican blend cheese (optional)
Instructions
- Place the chicken breasts in the bottom of the crockpot.
- Sprinkle taco seasoning over the chicken.
- Add salsa, black beans, corn, green chilies, and chopped onion.
- Pour chicken broth over the top.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- Once cooked, shred the chicken in the crockpot using two forks and stir well to combine.
- Optional: Sprinkle with shredded cheese and cover until melted.
- Serve over rice, in tortillas, or as desired.
