Description

This easy and delicious Crockpot Mexican Chicken recipe is a perfect set-it-and-forget-it meal, packed with bold Mexican flavors and ideal for tacos, burritos, or rice bowls.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (4 oz) diced green chilies (optional)
  • 1/2 cup chopped onion
  • 1/2 cup chicken broth
  • 1/2 cup shredded cheddar or Mexican blend cheese (optional)

Instructions

  1. Place the chicken breasts in the bottom of the crockpot.
  2. Sprinkle taco seasoning over the chicken.
  3. Add salsa, black beans, corn, green chilies, and chopped onion.
  4. Pour chicken broth over the top.
  5. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  6. Once cooked, shred the chicken in the crockpot using two forks and stir well to combine.
  7. Optional: Sprinkle with shredded cheese and cover until melted.
  8. Serve over rice, in tortillas, or as desired.
