Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 cups cherry tomatoes, diced
  • 2 cloves garlic, minced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh basil, chopped
  • 1 tablespoon balsamic vinegar
  • 1/2 cup shredded mozzarella cheese (optional)

Instructions

  1. Preheat the grill or a skillet over medium-high heat.
  2. Rub chicken breasts with olive oil, Italian seasoning, salt, and pepper.
  3. Grill or sear the chicken for 6-7 minutes per side or until fully cooked and juices run clear.
  4. While chicken is cooking, prepare the bruschetta topping by combining diced tomatoes, garlic, red onion, basil, and balsamic vinegar in a bowl.
