- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 cups cherry tomatoes, diced
- 2 cloves garlic, minced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh basil, chopped
- 1 tablespoon balsamic vinegar
- 1/2 cup shredded mozzarella cheese (optional)
Instructions
- Preheat the grill or a skillet over medium-high heat.
- Rub chicken breasts with olive oil, Italian seasoning, salt, and pepper.
- Grill or sear the chicken for 6-7 minutes per side or until fully cooked and juices run clear.
- While chicken is cooking, prepare the bruschetta topping by combining diced tomatoes, garlic, red onion, basil, and balsamic vinegar in a bowl.
- Once chicken is cooked, top each breast with a generous spoonful of the tomato mixture.
- Optionally, sprinkle mozzarella cheese on top and let it melt slightly before serving.
- Serve warm, optionally garnished with extra basil.

- You can marinate the chicken in olive oil and seasoning ahead of time for extra flavor.
- Use roma tomatoes if cherry tomatoes aren’t available.
