- 1/2 cup unsweetened almond milk
- 1/4 cup chia seeds
- 2 tbsp maple syrup or honey
- 1/4 tsp vanilla extract
- 1/4 cup shredded coconut (plus more for topping)
- 2–3 Raffaello candies, crushed (optional, for garnish)
- Pinch of salt
Instructions
- In a medium bowl, whisk together coconut milk, almond milk, maple syrup (or honey), vanilla extract, and a pinch of salt.
- Add the chia seeds and shredded coconut, then stir well to combine.
- Let the mixture sit for 5 minutes, then stir again to prevent clumping.
- Cover the bowl and refrigerate for at least 2 hours or overnight until thickened.
- Before serving, give it a good stir. If the pudding is too thick, add a splash of almond milk to loosen.
- Spoon into serving glasses or jars and top with more shredded coconut and crushed Raffaello candies if using.
Notes
- For a sweeter taste, adjust the maple syrup or honey to your liking.
- Use only coconut milk if you want it extra creamy and rich.
