Description
A quick and flavorful Mexican-inspired dip made with sweet corn, cheese, and spices—perfect for parties or as a side dish.
Ingredients
- 4 cups corn kernels (fresh, canned, or frozen)
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1/2 cup cotija cheese, crumbled
- 1/4 cup chopped fresh cilantro
- 1/2 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1 tablespoon lime juice
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- 1 tablespoon butter (if sautéing corn)
Instructions
- If using fresh or frozen corn, sauté the corn in butter over medium-high heat for 5-7 minutes until slightly charred. If using canned corn, drain and sauté briefly.
- In a large bowl, mix together the mayonnaise, sour cream, lime juice, chili powder, smoked paprika, garlic powder, salt, and pepper.
- Fold in the cooked corn, cotija cheese, and chopped cilantro until well combined.
- Adjust seasoning to taste and serve warm or chilled with tortilla chips.
Notes
- Can be served warm or cold.
- For extra spice, add diced jalapeños or hot sauce.
- Great as a taco topping or side dish too.
