Description

A quick and flavorful Mexican-inspired dip made with sweet corn, cheese, and spices—perfect for parties or as a side dish.


Ingredients

  • 4 cups corn kernels (fresh, canned, or frozen)
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup cotija cheese, crumbled
  • 1/4 cup chopped fresh cilantro
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1 tablespoon lime juice
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon butter (if sautéing corn)


Instructions

  1. If using fresh or frozen corn, sauté the corn in butter over medium-high heat for 5-7 minutes until slightly charred. If using canned corn, drain and sauté briefly.
  2. In a large bowl, mix together the mayonnaise, sour cream, lime juice, chili powder, smoked paprika, garlic powder, salt, and pepper.
  3. Fold in the cooked corn, cotija cheese, and chopped cilantro until well combined.
  4. Adjust seasoning to taste and serve warm or chilled with tortilla chips.

Notes

  • Can be served warm or cold.
  • For extra spice, add diced jalapeños or hot sauce.
  • Great as a taco topping or side dish too.
