Description

A flavorful and simple Greek-inspired chicken bowl, perfect for a healthy lunch or dinner. This dish features grilled chicken, fresh vegetables, and a tangy tzatziki sauce, all served over a bed of rice.

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 cup cooked rice (white or brown)
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup crumbled feta cheese
  • 1/4 cup tzatziki sauce

Instructions

  1. Preheat the grill or a grill pan to medium-high heat.
  2. Rub the chicken breasts with olive oil, oregano, garlic powder, salt, and pepper.
  3. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  4. While the chicken cooks, prepare the rice and chop the vegetables (cucumber, tomatoes, onion, olives).
  5. Once the chicken is cooked, let it rest for a few minutes before slicing it into thin strips.
  6. In each bowl, layer a scoop of rice, followed by the diced cucumber, tomatoes, onion, olives, and feta cheese.
  7. Top the bowl with sliced chicken and a generous drizzle of tzatziki sauce.
