Description

These easy microwave caramels are soft, chewy, and perfectly sweet. Made in minutes using simple ingredients, they’re ideal for holiday treats or homemade gifts.


Ingredients

  • 1 cup unsalted butter
  • 2 1/4 cups packed brown sugar
  • 1 cup light corn syrup
  • 1 can (14 oz) sweetened condensed milk
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Line an 8×8-inch baking dish with parchment paper and lightly grease it.
  2. In a large microwave-safe bowl, melt the butter.
  3. Add brown sugar, corn syrup, sweetened condensed milk, and salt. Stir to combine.
  4. Microwave the mixture on high for 6-7 minutes, stirring every 2 minutes. Use caution as the mixture will be very hot.
  5. Check for doneness by dropping a small spoonful into cold water — it should form a soft ball.
  6. Stir in vanilla extract.
  7. Pour the caramel into the prepared dish and let cool completely at room temperature.
  8. Cut into squares and wrap in wax paper if desired.
