- 3 tablespoons granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large eggs
- 1 3/4 cups milk
- 1/4 cup melted butter or vegetable oil
- 1 teaspoon vanilla extract (optional)
Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, beat the eggs and then add the milk, melted butter (or oil), and vanilla extract if using.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are fine.
- Heat a lightly greased griddle or skillet over medium heat.
- Pour 1/4 cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown.
- Serve warm with your favorite toppings.
Notes
- Mix can be stored dry in an airtight container for up to 3 months.
- Add blueberries or chocolate chips to the batter for extra flavor.
- Use buttermilk for a richer taste.
