A creamy and comforting dessert, this easy rice pudding recipe is made with simple pantry staples and comes together quickly for a delicious treat.
Ingredients
- 1/2 cup uncooked white rice
- 2 cups whole milk
- 1/3 cup granulated sugar
- 1/4 teaspoon salt
- 1 egg, beaten
- 2/3 cup whole milk (additional)
- 1 tablespoon unsalted butter
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon (optional, for garnish)
- 1/4 cup raisins (optional)
Instructions
- In a medium saucepan, bring 1 1/2 cups of water to a boil. Stir in the rice, reduce heat to low, cover, and simmer for 20 minutes.
- In another saucepan, combine cooked rice, 2 cups milk, sugar, and salt. Cook over medium heat until thick and creamy, about 15-20 minutes.
- Stir in beaten egg and the additional 2/3 cup milk. Cook for 2 more minutes, stirring constantly to prevent curdling.
- Remove from heat and stir in butter and vanilla extract.
- Let cool slightly. If desired, stir in raisins and sprinkle with cinnamon before serving.
Notes
- You can substitute almond or oat milk for a dairy-free version.
- For extra flavor, add a cinnamon stick while cooking the pudding and remove before serving.
- Serve warm or chilled, depending on preference.
