Description

A creamy and comforting dessert, this easy rice pudding recipe is made with simple pantry staples and comes together quickly for a delicious treat.


Ingredients

  • 1/2 cup uncooked white rice
  • 2 cups whole milk
  • 1/3 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 egg, beaten
  • 2/3 cup whole milk (additional)
  • 1 tablespoon unsalted butter
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon (optional, for garnish)
  • 1/4 cup raisins (optional)


Instructions

  1. In a medium saucepan, bring 1 1/2 cups of water to a boil. Stir in the rice, reduce heat to low, cover, and simmer for 20 minutes.
  2. In another saucepan, combine cooked rice, 2 cups milk, sugar, and salt. Cook over medium heat until thick and creamy, about 15-20 minutes.
  3. Stir in beaten egg and the additional 2/3 cup milk. Cook for 2 more minutes, stirring constantly to prevent curdling.
  4. Remove from heat and stir in butter and vanilla extract.
  5. Let cool slightly. If desired, stir in raisins and sprinkle with cinnamon before serving.

Notes

  • You can substitute almond or oat milk for a dairy-free version.
  • For extra flavor, add a cinnamon stick while cooking the pudding and remove before serving.
  • Serve warm or chilled, depending on preference.
