- 4 cups milk (whole or 2%)
- 1/3 cup white sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon (optional)
- 1/4 cup raisins (optional)
Instructions
- In a medium saucepan, combine rice, milk, sugar, and salt.
- Bring to a gentle boil over medium heat, stirring frequently.
- Reduce heat to low and simmer uncovered, stirring occasionally, for 45-50 minutes or until the mixture is thick and creamy.
- Stir in vanilla extract and optional cinnamon and raisins.
- Remove from heat and let cool slightly before serving. Serve warm or chilled.
Notes
- Use cooked rice to shorten cooking time; reduce simmering to about 20 minutes.
- Adjust sugar to taste depending on sweetness preference.
- Great topped with a sprinkle of nutmeg or fresh fruit.
