Description

This easy sheet pan chicken fajitas recipe is a quick, healthy, and delicious weeknight meal made with seasoned chicken, bell peppers, and onions, all roasted together on one pan.


Ingredients

  • 1.5 lbs boneless skinless chicken breasts, sliced into thin strips
  • 3 bell peppers (red, yellow, green), sliced
  • 1 large red onion, sliced
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Juice of 1 lime
  • 8 small flour or corn tortillas
  • Optional toppings: sour cream, guacamole, salsa, shredded cheese, cilantro

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the chicken strips, sliced bell peppers, and red onion.
  3. Drizzle with olive oil and sprinkle with chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Toss to coat evenly.
  4. Spread the mixture evenly onto a large sheet pan.
  5. Roast in the oven for 20-25 minutes, stirring halfway through, until the chicken is cooked through and the vegetables are tender and slightly charred.
  6. Remove from oven and squeeze fresh lime juice over the mixture.
  7. Serve immediately with warm tortillas and your choice of toppings.

Notes

  • For a spicier version, add 1/4 tsp cayenne pepper to the seasoning mix.
  • You can use chicken thighs for a juicier alternative.
