- 1 lb ground pork or ground turkey
- 1 tablespoon sesame oil
- 3 cups coleslaw mix or shredded cabbage
- 1 cup shredded carrots
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1/4 cup soy sauce or tamari (for gluten-free)
- 1 tablespoon rice vinegar
- 1 teaspoon sriracha or chili garlic sauce (optional)
- 2 green onions, sliced
- 1 tablespoon sesame seeds (optional)
Instructions
- In a large skillet over medium heat, add sesame oil and cook the ground pork or turkey until fully browned.
- Add garlic and ginger, stir and cook for 1-2 minutes until fragrant.
- Mix in the coleslaw mix and shredded carrots. Stir to combine.
- Add soy sauce, rice vinegar, and sriracha if using. Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender.
- Top with sliced green onions and sesame seeds before serving.
Notes
- You can substitute ground meat with plant-based alternatives for a vegetarian version.
- Add more chili sauce if you like it spicy.
- Serve over cauliflower rice for a fuller meal.
