Description

These no-bake energy balls are the perfect healthy snack made with oats, peanut butter, honey, and chocolate chips. They’re quick to make, portable, and full of protein and fiber.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup natural peanut butter
  • 1/3 cup honey
  • 1/2 cup ground flaxseed
  • 1/4 cup mini chocolate chips
  • 1 tsp vanilla extract
  • 1/8 tsp salt

Instructions

  1. In a large mixing bowl, combine rolled oats, ground flaxseed, and salt.
  2. Add peanut butter, honey, and vanilla extract to the dry ingredients.
  3. Stir well until all ingredients are thoroughly mixed.
  4. Fold in mini chocolate chips.
  5. Use a tablespoon to scoop and roll the mixture into bite-sized balls.
  6. Place the balls on a parchment-lined tray and refrigerate for at least 30 minutes to set.
  7. Store in an airtight container in the refrigerator for up to one week.

Notes

  • You can substitute almond butter or sunflower seed butter for peanut butter.
  • For added texture, mix in shredded coconut or chopped nuts.
  • If the mixture is too sticky, chill it briefly before rolling.
