- 1 cup granulated sugar (for caramel)
- 1 can (14 oz) sweetened condensed milk
- 1 can (12 oz) evaporated milk
- 4 large eggs
- 1 package (8 oz) cream cheese, softened
- 1 tablespoon vanilla extract
Instructions
- In a saucepan over medium heat, melt sugar until golden and syrupy, swirling the pan to ensure even caramelization. Immediately pour into a round baking dish or flan mold, tilting to coat the bottom. Let harden.
- Preheat oven to 350°F (175°C).
- In a blender, combine sweetened condensed milk, evaporated milk, eggs, cream cheese, and vanilla extract. Blend until smooth and creamy.
- Pour the mixture over the set caramel in the mold.
- Place the flan dish into a larger baking pan and fill the outer pan with hot water to create a water bath.
- Bake for 60–70 minutes, or until the center is set but slightly jiggly.
- Remove from oven and let cool in the water bath. Then refrigerate for at least 4 hours or overnight.
- To serve, run a knife around the edges and invert onto a serving plate so the caramel flows over the flan.
Notes
- Use room temperature cream cheese to avoid lumps in the custard.
- Chilling overnight helps the flan firm up and enhances the flavor.
- Strain the mixture before baking for an extra smooth texture.
