Description

These flavorful oven-baked potatoes in foil are a simple and delicious side dish. Wrapped in foil with butter, garlic, and herbs, they come out tender, perfectly seasoned, and full of flavor.


Ingredients

  • 4 medium russet or Yukon gold potatoes, scrubbed and cut into cubes
  • 2 tbsp olive oil
  • 2 tbsp butter, cut into small pieces
  • 3 cloves garlic, minced
  • 1 tsp dried rosemary or thyme
  • 1/2 tsp paprika
  • Salt and black pepper to taste
  • 2 tbsp chopped fresh parsley (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss potato cubes with olive oil, garlic, rosemary, paprika, salt, and pepper.
  3. Cut 4 large pieces of aluminum foil. Divide the potato mixture evenly among them.
  4. Top each packet with small pieces of butter.
  5. Fold and seal each foil packet tightly to trap steam and flavors.
  6. Place foil packets on a baking sheet and bake for 35–40 minutes, or until potatoes are fork-tender.
  7. Carefully open packets (watch for steam), sprinkle with fresh parsley, and serve hot.

Notes

  • Yukon gold potatoes work especially well for a creamy texture.
  • For extra flavor, add sliced onions or bell peppers to the packets.
  • Can be made on the grill instead of the oven — grill over medium heat for 30–35 minutes.
