Description
These flavorful oven-baked potatoes in foil are a simple and delicious side dish. Wrapped in foil with butter, garlic, and herbs, they come out tender, perfectly seasoned, and full of flavor.

- 4 medium russet or Yukon gold potatoes, scrubbed and cut into cubes
- 2 tbsp olive oil
- 2 tbsp butter, cut into small pieces
- 3 cloves garlic, minced
- 1 tsp dried rosemary or thyme
- 1/2 tsp paprika
- Salt and black pepper to taste
- 2 tbsp chopped fresh parsley (for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss potato cubes with olive oil, garlic, rosemary, paprika, salt, and pepper.
- Cut 4 large pieces of aluminum foil. Divide the potato mixture evenly among them.
- Top each packet with small pieces of butter.
- Fold and seal each foil packet tightly to trap steam and flavors.
- Place foil packets on a baking sheet and bake for 35–40 minutes, or until potatoes are fork-tender.
- Carefully open packets (watch for steam), sprinkle with fresh parsley, and serve hot.
Notes
- Yukon gold potatoes work especially well for a creamy texture.
- For extra flavor, add sliced onions or bell peppers to the packets.
- Can be made on the grill instead of the oven — grill over medium heat for 30–35 minutes.
