Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 6 tablespoons cold unsalted butter, cubed
  • 3/4 cup cold buttermilk (plus more for brushing)
  • 1 tablespoon honey (optional for slight sweetness)

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. In a separate bowl, mix buttermilk and honey if using. Pour into the dry ingredients and stir just until combined—do not overmix.
  5. Turn the dough out onto a lightly floured surface and gently pat it into a 1-inch thick rectangle. Fold the dough over itself 2–3 times to create layers, then pat it out again.
  6. Cut biscuits using a round cutter and place them on the prepared baking sheet, slightly touching.
  7. Brush the tops with a bit of buttermilk.
  8. Bake for 12–15 minutes or until golden brown.
