- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 6 tablespoons cold unsalted butter, cubed
- 3/4 cup cold buttermilk (plus more for brushing)
- 1 tablespoon honey (optional for slight sweetness)
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, baking powder, baking soda, and salt.
- Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- In a separate bowl, mix buttermilk and honey if using. Pour into the dry ingredients and stir just until combined—do not overmix.
- Turn the dough out onto a lightly floured surface and gently pat it into a 1-inch thick rectangle. Fold the dough over itself 2–3 times to create layers, then pat it out again.
- Cut biscuits using a round cutter and place them on the prepared baking sheet, slightly touching.
- Brush the tops with a bit of buttermilk.
- Bake for 12–15 minutes or until golden brown.
- Let cool slightly and serve warm with butter, jam, or gravy.
Notes
- Use very cold butter and buttermilk for the fluffiest biscuits.
- Don’t twist the cutter when cutting biscuits—press straight down for a better rise.
- Leftovers can be stored in an airtight container for up to 2 days or frozen for longer storage.
