Description

These fluffy matcha muffins are light, moist, and bursting with the earthy flavor of green tea. Perfect for a healthy breakfast or snack.


Ingredients

  • 1 tbsp matcha powder
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2/3 cup milk
  • 1/2 cup plain yogurt
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, matcha powder, sugars, baking powder, and salt.
  3. In another bowl, mix milk, yogurt, oil, eggs, and vanilla extract until smooth.
  4. Pour wet ingredients into dry ingredients and stir until just combined. Do not overmix.
  5. Divide the batter evenly among muffin cups.
  6. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
