Ingredients
Carrot Salad:
- 4 large carrots, peeled and grated
- 2 tablespoons fresh lemon juice
- 1 tablespoon Dijon mustard
- 2 tablespoons olive oil
- 1 teaspoon honey or maple syrup (optional)
- 1 tablespoon chopped fresh parsley
- Salt and black pepper to taste
Instructions
- In a large bowl, whisk together the lemon juice, Dijon mustard, olive oil, and honey if using until well combined. Add the grated carrots and chopped parsley.
- Toss until the carrots are evenly coated in the dressing. Season with salt and black pepper to taste.
- Let the salad sit for 10–15 minutes before serving to allow the flavors to meld.
