Description

This French Carrot Salad is a refreshing and flavorful side dish that is quick and easy to prepare. Grated carrots are tossed in a tangy Dijon mustard vinaigrette, making it a perfect addition to any meal.


Ingredients

Carrot Salad:

  • 4 large carrots, peeled and grated
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 2 tablespoons olive oil
  • 1 teaspoon honey or maple syrup (optional)
  • 1 tablespoon chopped fresh parsley
  • Salt and black pepper to taste
