Description

A rich and savory French onion soup made with caramelized onions, beef broth, and herbs, topped with toasted bread and melted cheese for a classic, comforting dish.


Ingredients

  • 2 tbsp butter
  • 1 tbsp olive oil
  • 4 large yellow onions, thinly sliced
  • 1 tsp sugar
  • 1/2 tsp salt
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine (optional)
  • 6 cups beef broth
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 baguette, sliced and toasted
  • 1 1/2 cups shredded Gruyère or Swiss cheese

Instructions

  1. In a large pot, melt butter with olive oil over medium heat. Add onions, sugar, and salt, and cook, stirring occasionally, until onions are deeply golden and caramelized, about 30-40 minutes.
  2. Add garlic and cook for 1 minute. Deglaze with white wine if using, scraping up any browned bits from the bottom of the pot. Simmer for 2-3 minutes.
  3. Add beef broth, thyme, and bay leaf. Bring to a simmer and cook for 20-25 minutes. Remove bay leaf and season with salt and pepper to taste.
  4. Preheat the broiler. Ladle soup into oven-safe bowls, top each with a slice of toasted baguette, and sprinkle generously with cheese.
  5. Broil for 2-4 minutes, or until cheese is melted and bubbly. Serve hot.

Notes

  • For vegetarian version, use vegetable broth and omit cheese or use plant-based alternative.
  • Use a mix of onions (yellow and sweet) for added depth of flavor.
  • Soup base can be made ahead and refrigerated for up to 3 days.
