- 4 ripe bananas
- 8 popsicle sticks
- 1 1/2 cups semi-sweet or dark chocolate chips
- 2 tablespoons coconut oil (optional, for smoother chocolate)
- 1/4 cup chopped nuts, sprinkles, or shredded coconut (optional toppings)
Instructions
- Peel the bananas and cut them in half crosswise.
- Insert a popsicle stick into each banana half and place them on a parchment-lined baking sheet.
- Freeze the bananas for at least 1 hour or until firm.
- In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until smooth and melted.
- Dip each frozen banana into the melted chocolate, using a spoon to help coat if needed.
- Immediately sprinkle with toppings if using, then return to the baking sheet.
- Freeze the chocolate-covered bananas for another 30 minutes or until the chocolate is set.
- Serve immediately or store in an airtight container in the freezer.
