Description

  • 8 popsicle sticks
  • 1 1/2 cups semi-sweet or dark chocolate chips
  • 2 tablespoons coconut oil (optional, for smoother chocolate)
  • 1/4 cup chopped nuts, sprinkles, or shredded coconut (optional toppings)

Instructions

  1. Peel the bananas and cut them in half crosswise.
  2. Insert a popsicle stick into each banana half and place them on a parchment-lined baking sheet.
  3. Freeze the bananas for at least 1 hour or until firm.
  4. In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until smooth and melted.
  5. Dip each frozen banana into the melted chocolate, using a spoon to help coat if needed.
  6. Immediately sprinkle with toppings if using, then return to the baking sheet.
  7. Freeze the chocolate-covered bananas for another 30 minutes or until the chocolate is set.
