Description

Creamy and rich homemade fudge popsicles that are a healthier, dairy-free alternative to store-bought fudgesicles. Perfect for hot days or chocolate cravings.


Ingredients

  • 2 cups full-fat coconut milk
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 1 tablespoon cornstarch (optional, for extra creaminess)

Instructions

  1. In a medium saucepan, whisk together coconut milk, cocoa powder, sweetener, vanilla extract, salt, and cornstarch (if using).
  2. Heat the mixture over medium heat, whisking constantly, until it thickens slightly and becomes smooth (about 5-7 minutes).
  3. Remove from heat and let the mixture cool slightly.
  4. Pour the mixture into popsicle molds.
  5. Insert sticks and freeze for at least 4-6 hours, or until fully set.
  6. To remove, run warm water over the molds for a few seconds and gently release the popsicles.

Notes

  • Use a high-quality cocoa powder for best flavor.
  • You can substitute agave syrup or a low-carb sweetener if preferred.
