- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 4 garlic cloves, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 tablespoon lemon zest
- 2 tablespoons lemon juice
- 1 tablespoon butter
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat oven to 400°F (200°C).
- In a small bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper. Rub the mixture over the chicken breasts.
- Heat a skillet over medium-high heat and sear the chicken for 2-3 minutes on each side until golden brown. Transfer to a baking dish and bake for 20-25 minutes or until cooked through.
- Meanwhile, cook the orzo in a medium saucepan with chicken broth according to package instructions until tender and liquid is mostly absorbed.
- Stir in lemon zest, lemon juice, butter, and parsley into the orzo. Adjust seasoning if needed.
- Serve the garlic herb chicken over the lemon orzo. Garnish with additional parsley and lemon wedges if desired.

- For extra flavor, marinate the chicken for 1 hour before cooking.
- Substitute dried herbs if fresh ones aren’t available—use one-third the amount.
- Add steamed vegetables or a side salad for a complete meal.
