Description

A flavorful one-pan dish featuring juicy garlic parmesan chicken breasts paired with crispy roasted potatoes, all baked to perfection for a comforting and hearty meal.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1.5 lbs baby potatoes, halved
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried Italian seasoning
  • 1/2 tsp paprika
  • Salt and black pepper, to taste
  • 2 tbsp chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a large baking dish or sheet pan.
  2. In a small bowl, mix olive oil, minced garlic, Parmesan cheese, Italian seasoning, paprika, salt, and pepper.
  3. Place the chicken breasts and halved potatoes in a large bowl. Pour the garlic parmesan mixture over and toss to coat evenly.
  4. Arrange the coated chicken and potatoes in the prepared baking dish in a single layer.
  5. Bake for 35–40 minutes, or until the chicken is cooked through (internal temperature of 165°F/75°C) and the potatoes are tender and golden brown.
  6. Optionally, broil for an additional 2–3 minutes for extra crispiness.
  7. Remove from oven, garnish with chopped parsley, and serve hot.

Notes

  • Use chicken thighs instead of breasts for a juicier result.
  • For a spicier version, add red pepper flakes to the seasoning mix.
  • Can be meal prepped and stored in the fridge for up to 3 days.
