- 4 boneless, skinless chicken breasts
- 1.5 lbs baby potatoes, halved
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 tsp dried Italian seasoning
- 1/2 tsp paprika
- Salt and black pepper, to taste
- 2 tbsp chopped fresh parsley (optional, for garnish)
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a large baking dish or sheet pan.
- In a small bowl, mix olive oil, minced garlic, Parmesan cheese, Italian seasoning, paprika, salt, and pepper.
- Place the chicken breasts and halved potatoes in a large bowl. Pour the garlic parmesan mixture over and toss to coat evenly.
- Arrange the coated chicken and potatoes in the prepared baking dish in a single layer.
- Bake for 35–40 minutes, or until the chicken is cooked through (internal temperature of 165°F/75°C) and the potatoes are tender and golden brown.
- Optionally, broil for an additional 2–3 minutes for extra crispiness.
- Remove from oven, garnish with chopped parsley, and serve hot.
Notes
- Use chicken thighs instead of breasts for a juicier result.
- For a spicier version, add red pepper flakes to the seasoning mix.
- Can be meal prepped and stored in the fridge for up to 3 days.
