- 1 pound boneless, skinless chicken breasts, diced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cloves garlic, minced
- 2 cups chicken broth
- 2 cups heavy cream
- 1 cup grated Parmesan cheese
- 8 ounces penne or fettuccine pasta
- 1 tablespoon chopped parsley (optional, for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season diced chicken with salt and pepper, then add to the skillet and cook until browned and cooked through, about 5-7 minutes.
- Add minced garlic and sauté for 1 minute until fragrant.
- Pour in chicken broth and heavy cream, stir well to combine.
- Add uncooked pasta to the skillet, bring to a simmer, cover, and cook for 12-15 minutes, stirring occasionally, until pasta is tender.
- Stir in Parmesan cheese until melted and the sauce is creamy.
- Remove from heat and garnish with chopped parsley if desired.
