Ingredients
Potatoes:
- 2 pounds red potatoes, halved or quartered
Dressing:
- 6 slices thick-cut bacon, chopped
- 1/2 cup finely chopped yellow onion
- 1/4 cup apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
Instructions
- Cook Potatoes: Boil red potatoes until tender, then cut into bite-sized pieces.
- Cook Bacon: Crisp bacon in a skillet; set aside.
- Make Dressing: Sauté onion in bacon drippings, add vinegar, mustard, sugar, salt, and pepper. Simmer.
