Granola Cups are crunchy, wholesome mini cups made from oats and honey, baked in muffin tins and filled with yogurt or fruit—perfect for a healthy breakfast or snack.

- 2 cups rolled oats
- 1/2 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 1/4 cup brown sugar
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1/4 cup chopped nuts (optional)
- 1/4 cup mini chocolate chips or dried fruit (optional)
- Yogurt and fresh fruit, for filling
Instructions
- Preheat oven to 350°F (175°C). Lightly grease a 12-cup muffin tin.
- In a large bowl, combine oats, honey, melted coconut oil, brown sugar, cinnamon, salt, vanilla, and any optional add-ins.
- Spoon mixture into muffin cups and press firmly into the bottom and up the sides to form a cup shape.
- Bake for 15–18 minutes or until edges are golden brown.
- Let cool completely in the muffin tin to firm up before removing.
- Fill each granola cup with yogurt and top with fresh fruit just before serving.
Notes
- Store unfilled granola cups in an airtight container for up to 5 days.
- Use Greek yogurt for extra protein and creaminess.
- Try nut butter or chocolate spread as an alternative filling.
