Description

A delicious twist on the classic Caprese salad, this Grilled Caprese Sandwich features fresh mozzarella, juicy tomatoes, and fragrant basil grilled to perfection between slices of crusty bread.


Ingredients

  • 4 slices of sourdough or ciabatta bread
  • 2 tablespoons olive oil
  • 8 oz fresh mozzarella, sliced
  • 2 medium tomatoes, sliced
  • 1/4 cup fresh basil leaves
  • 2 tablespoons balsamic glaze
  • Salt and pepper to taste

Instructions

  1. Preheat a grill pan or skillet over medium heat.
  2. Brush one side of each bread slice with olive oil.
  3. Place mozzarella, tomato slices, and basil leaves on the un-oiled side of two bread slices. Drizzle with balsamic glaze and season with salt and pepper.
  4. Top with remaining bread slices, oiled side out.
  5. Grill sandwiches for 3–4 minutes on each side, or until the bread is golden and cheese is melted.
  6. Remove from heat, slice, and serve warm.

Notes

  • Use heirloom tomatoes for added flavor and color.
  • Add a spread of pesto for extra herb flavor.
  • For a crispier texture, use a panini press if available.
