Description

This Hearty Taco Soup is a comforting and flavorful meal perfect for any occasion. Made with ground beef or turkey, kidney beans, black beans, corn, and a blend of Mexican-inspired spices, this slow-cooked soup delivers rich, satisfying flavors with minimal effort. It’s easy to prepare and can be topped with cheese, sour cream, green onions, and more for a customizable, crowd-pleasing dish.

Ingredients

Scale

For the Soup:

  • 1 lb ground beef (or ground turkey)
  • 1 medium onion, chopped
  • 1 packet taco seasoning (or homemade taco seasoning)
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 (14.5 oz) can diced tomatoes with green chilies (optional)
  • 1 (10 oz) can diced tomatoes with green chilies
  • 1 (8 oz) can tomato sauce
  • 2 cups beef broth (or chicken broth)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste

Optional Toppings:

  • Shredded cheese
  • Sour cream
  • Chopped green onions
  • Tortilla chips
  • Jalapeños

Instructions

  1. Cook the Ground Meat: In a large skillet, cook the ground beef or turkey along with the chopped onion over medium heat until the meat is browned and the onion is soft. Drain any excess fat to keep the soup from becoming greasy.
  2. Transfer to the Slow Cooker: Add the cooked meat and onions to your slow cooker. Then add the kidney beans, black beans, corn, diced tomatoes (with or without green chilies), tomato sauce, beef broth, taco seasoning, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Stir everything together to combine well.
  3. Cook the Soup: Cover the slow cooker and cook the soup on low for 6-7 hours or on high for 3-4 hours. Occasionally stir the soup during cooking if possible. The soup is done when all the flavors meld together and it is heated through.
  4. Serve: Once cooked, stir the soup again and taste for seasoning. Adjust salt, pepper, or spices if needed.
  5. Add Toppings: Ladle the soup into bowls and garnish with your favorite toppings such as shredded cheese, sour cream, chopped green onions, tortilla chips, or jalapeños for added texture and flavor.

Notes

  • You can substitute ground turkey for beef for a leaner option.
  • Use homemade taco seasoning to reduce sodium and control spice level.
  • Feel free to add extra vegetables like bell peppers or zucchini for added nutrition.
  • The soup can be refrigerated for up to 4 days or frozen for up to 3 months.
  • If you don’t have a slow cooker, you can simmer the soup on the stove over low heat for 1-2 hours.
  • Adjust the spice level by adding more or less jalapeños or chili powder.
