- 1.5 lbs skirt steak
- 1/4 cup olive oil
- 2 tbsp fresh lemon juice
- 3 cloves garlic, minced
- 2 tbsp chopped fresh parsley
- 1 tbsp chopped fresh rosemary
- 1 tbsp chopped fresh thyme
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- In a small bowl, whisk together olive oil, lemon juice, garlic, parsley, rosemary, thyme, salt, and pepper.
- Place skirt steak in a resealable plastic bag or shallow dish and pour the marinade over it. Marinate in the refrigerator for at least 1 hour, up to 6 hours.
- Preheat grill to high heat. Remove steak from marinade and let any excess drip off.
- Grill steak for 3-4 minutes per side for medium-rare, or to desired doneness.
- Let steak rest for 5 minutes before slicing thinly against the grain.
- Serve with your choice of sides such as roasted vegetables, salad, or potatoes.
