Description

Herbed Skirt Steak is a flavorful and juicy grilled steak marinated with fresh herbs, garlic, and olive oil. It’s a simple yet elegant dish perfect for outdoor grilling or a quick weeknight dinner.


Ingredients

  • 1.5 lbs skirt steak
  • 1/4 cup olive oil
  • 2 tbsp fresh lemon juice
  • 3 cloves garlic, minced
  • 2 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh rosemary
  • 1 tbsp chopped fresh thyme
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. In a small bowl, whisk together olive oil, lemon juice, garlic, parsley, rosemary, thyme, salt, and pepper.
  2. Place skirt steak in a resealable plastic bag or shallow dish and pour the marinade over it. Marinate in the refrigerator for at least 1 hour, up to 6 hours.
  3. Preheat grill to high heat. Remove steak from marinade and let any excess drip off.
  4. Grill steak for 3-4 minutes per side for medium-rare, or to desired doneness.
  5. Let steak rest for 5 minutes before slicing thinly against the grain.
  6. Serve with your choice of sides such as roasted vegetables, salad, or potatoes.

Notes

  • Marinate for at least 1 hour for the best flavor, but not longer than 6 hours.
  • Skirt steak is best cooked quickly over high heat to retain tenderness.
  • Slice against the grain to ensure tenderness.
