- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 tsp salt
- 2 3/4 cups whole milk
- 3/4 cup dulce de leche
- 3 large egg yolks
- 2 tbsp unsalted butter
- 1 tsp vanilla extract
- Whipped cream, for serving (optional)
- Grated chocolate or caramel sauce, for garnish (optional)
Instructions
- In a medium saucepan, whisk together sugar, cornstarch, and salt.
- Gradually whisk in the milk until smooth and combined.
- Add dulce de leche and place the pan over medium heat, stirring constantly.
- In a small bowl, whisk egg yolks. Once the milk mixture is hot but not boiling, slowly whisk about 1/2 cup into the yolks to temper them.
- Slowly pour the tempered yolks back into the saucepan, whisking constantly.
- Continue to cook over medium heat, stirring constantly, until the mixture thickens and starts to bubble, about 5-7 minutes.
- Remove from heat and stir in butter and vanilla extract until smooth.
- Pour pudding into individual serving dishes and press plastic wrap directly onto the surface to prevent a skin from forming.
- Refrigerate for at least 2 hours or until fully chilled.
- Top with whipped cream and garnish with grated chocolate or caramel sauce before serving, if desired.
Notes
- Use high-quality dulce de leche for best flavor.
- Can be made a day ahead and stored in the fridge.
- For a firmer texture, let it chill overnight.
