Description

A chewy, chocolatey treat made with caramel, crispy rice cereal, and melted chocolate, reminiscent of the classic Star Crunch snack.


Ingredients

  • 1 (11 oz) bag soft caramels, unwrapped
  • 2 tbsp unsalted butter
  • 2 tbsp milk or heavy cream
  • 1 1/2 cups semi-sweet chocolate chips
  • 3 cups crispy rice cereal
  • 1/4 tsp salt (optional)

Instructions

  1. Line a baking sheet with parchment paper and set aside.
  2. In a large saucepan over low heat, melt the caramels, butter, and milk together, stirring frequently until smooth.
  3. Remove from heat and stir in the chocolate chips until melted and fully combined.
  4. Gently fold in the crispy rice cereal until evenly coated with the chocolate-caramel mixture.
  5. Using a cookie scoop or spoon, drop mounds of the mixture onto the prepared baking sheet.
  6. Flatten slightly with the back of a spoon if desired, to resemble the classic Star Crunch shape.
  7. Allow to cool at room temperature until set, or place in the refrigerator for faster setting.

Notes

  • Store in an airtight container at room temperature for up to 5 days.
  • Use dark chocolate chips for a richer flavor.
  • You can microwave the caramel mixture in 30-second increments if preferred.
