Scale
- 4 cups fresh strawberries, hulled and mashed
- 4 cups granulated sugar
- 1/4 cup lemon juice
Instructions
- In a large bowl, combine the mashed strawberries and sugar. Mix well and let sit for 1 hour.
- Transfer the mixture to a large saucepan and add the lemon juice.
- Bring to a boil over medium-high heat, stirring constantly.
- Reduce heat and simmer for 20-25 minutes, stirring frequently, until the jam thickens.
- Test the jam’s consistency by placing a spoonful on a chilled plate. If it wrinkles when pushed with a finger, it’s ready.
- Remove from heat and let sit for 5 minutes. Skim off any foam if necessary.
- Pour the hot jam into sterilized jars, leaving 1/4 inch of headspace. Seal immediately.
- Process jars in a boiling water bath for 10 minutes for longer shelf life.
Notes
- Use ripe, fresh strawberries for the best flavor.
- The jam will thicken more as it cools.
- Store unopened jars in a cool, dark place. Refrigerate after opening.
