Description

A rich and creamy homemade vanilla ice cream made with real vanilla and simple ingredients. Perfect for hot days or as a base for endless dessert creations.

Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 tablespoon pure vanilla extract
  • 1 pinch salt
  • 5 large egg yolks

Instructions

  1. In a saucepan over medium heat, combine the milk, sugar, and salt. Stir until the sugar dissolves and the mixture is warm.
  2. In a separate bowl, whisk the egg yolks. Slowly pour some of the warm milk mixture into the yolks, whisking constantly to temper them.
  3. Pour the tempered yolks back into the saucepan with the remaining milk mixture.
  4. Cook over medium heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon.
  5. Remove from heat and strain the mixture through a fine-mesh sieve into a clean bowl.
  6. Stir in the heavy cream and vanilla extract.
  7. Chill the mixture in the refrigerator for at least 4 hours or overnight.
  8. Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions.
  9. Transfer to an airtight container and freeze until firm, about 4 hours.

Notes

  • Use high-quality vanilla extract or a vanilla bean for the best flavor.
  • Ensure the custard base is fully chilled before churning for a smoother texture.
  • For a richer ice cream, you can use more cream and less milk.
