Description
A simple and healthy honey-lime chicken and vegetables dish cooked in foil for easy prep and cleanup. Perfect for grilling or baking.
Ingredients
- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 tablespoons honey
- 2 tablespoons fresh lime juice
- 1 teaspoon lime zest
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 zucchini, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1/2 red onion, sliced
- Fresh cilantro, for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C) or heat a grill to medium-high.
- In a small bowl, whisk together olive oil, honey, lime juice, lime zest, garlic, chili powder, salt, and pepper.
- Cut two large pieces of aluminum foil. Place one chicken breast in the center of each piece.
- Divide the sliced vegetables evenly between the two foil packets, arranging them around the chicken.
- Drizzle the honey-lime mixture evenly over the chicken and vegetables.
- Fold the sides of the foil up and seal the packets tightly.
- Bake in the oven for 25–30 minutes or grill for 20–25 minutes, until the chicken is cooked through and vegetables are tender.
- Carefully open the foil packets and garnish with fresh cilantro if desired before serving.
Notes
- Use pre-cut vegetables to save time on prep.
- You can substitute chicken thighs for breasts if preferred.
- Double-wrap foil for better sealing when grilling.
