Instructions
- Preheat the oven to 400°F (200°C).
- Place the peeled and trimmed carrots on a baking sheet.
- In a small bowl, whisk together olive oil, honey, salt, pepper, and thyme if using.
- Drizzle the mixture over the carrots and toss to coat evenly.
- Spread the carrots out in a single layer on the baking sheet.
