Description

Enjoy the flavors of traditional Irish soda bread in the form of delicious scones. These buttermilk scones are perfect for breakfast or a snack, especially when served warm with butter or jam.

Ingredients

Dry Ingredients:

  • 2 cups all-purpose flour
  • 3 tablespoons granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt

Additional Ingredients:

  • 4 tablespoons cold unsalted butter (cubed)
  • ¾ cup buttermilk
  • 1 large egg
  • ½ cup raisins or currants
  • 1 teaspoon caraway seeds (optional)

Instructions

  1. Preheat the Oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking soda, baking powder, and salt.
  3. Add Butter: Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Combine Wet and Dry: Stir in the raisins and caraway seeds. In a separate bowl, whisk together the buttermilk and egg. Add the wet ingredients to the dry and stir until a soft dough forms.
  5. Shape and Bake: Turn the dough onto a floured surface, knead gently, pat into a circle, cut into wedges, and place on the baking sheet. Bake for 15–18 minutes until golden brown.
  6. Cool and Serve: Cool on a wire rack before serving.

Notes

  • Best served warm with butter or jam.
  • Can be frozen before or after baking for make-ahead convenience.
