Description

Italian Chopped Salad is a vibrant and hearty dish filled with crisp lettuce, salami, cheese, tomatoes, olives, and pepperoncini, all tossed in a zesty Italian vinaigrette—perfect as a side or main course.


Ingredients

  • 1 cup chopped radicchio or red cabbage
  • 1 cup cherry tomatoes, halved
  • 1/2 cup chopped cucumber
  • 1/2 cup sliced pepperoncini
  • 1/4 cup sliced black olives
  • 1/2 cup chopped salami
  • 1/2 cup diced provolone or mozzarella cheese
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup chopped fresh parsley (optional)
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

  1. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, oregano, salt, and pepper to make the dressing.
  2. In a large salad bowl, combine romaine, radicchio, cherry tomatoes, cucumber, pepperoncini, olives, salami, cheese, red onion, and parsley.
