Ingredients
- 6 cups chicken broth
- 3/4 cup pastina pasta (like acini di pepe or stelline)
- 1 tablespoon olive oil or butter
- 1 egg (optional)
- 2 tablespoons grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (optional, for garnish)
Instructions
- In a medium pot, bring the chicken broth to a boil.
- Add the pastina and stir. Reduce heat and simmer until the pasta is tender, about 5-6 minutes.
- If using, beat the egg in a bowl. Slowly drizzle it into the soup while stirring to create egg strands.
- Add olive oil or butter and stir to combine.
- Season with salt and pepper to taste.
- Stir in grated Parmesan cheese.
