Description

These colorful Jello cookies are soft, chewy, and bursting with fruity flavors. A fun and easy treat perfect for kids and parties.


Ingredients

  • 3/4 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 package (3 oz) Jello gelatin, any flavor
  • 2 eggs
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • Extra Jello powder for rolling (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter, sugar, and Jello powder until light and fluffy.
  3. Add the eggs and mix until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture and mix until a dough forms.
  6. Roll the dough into 1-inch balls. Optionally, roll each ball in additional Jello powder for extra color and flavor.
  7. Place the dough balls on the prepared baking sheet and flatten slightly with the bottom of a glass.
  8. Bake for 8–10 minutes, or until edges are set but centers are still soft.
  9. Allow cookies to cool on the sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • You can divide the dough and use different Jello flavors for a colorful variety.
  • Store cookies in an airtight container for up to 5 days.
  • These cookies do not spread much, so flattening them helps achieve the right shape.
