- 3/4 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 package (3 oz) Jello gelatin, any flavor
- 2 eggs
- 2 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- Extra Jello powder for rolling (optional)
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together the butter, sugar, and Jello powder until light and fluffy.
- Add the eggs and mix until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture and mix until a dough forms.
- Roll the dough into 1-inch balls. Optionally, roll each ball in additional Jello powder for extra color and flavor.
- Place the dough balls on the prepared baking sheet and flatten slightly with the bottom of a glass.
- Bake for 8–10 minutes, or until edges are set but centers are still soft.
- Allow cookies to cool on the sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
- You can divide the dough and use different Jello flavors for a colorful variety.
- Store cookies in an airtight container for up to 5 days.
- These cookies do not spread much, so flattening them helps achieve the right shape.
