Description

Indulge in the tangy and creamy delight of Key Lime Cheesecake. This dessert combines the zesty flavor of key limes with a rich, smooth cheesecake filling, all nestled in a buttery graham cracker crust. Perfect for any occasion, especially a refreshing treat during the summer months.

Ingredients

For the crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter (melted)

For the filling:

  • 24 oz cream cheese (softened)
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/2 cup key lime juice (fresh or bottled)
  • 1 tablespoon key lime zest
  • 1 teaspoon vanilla extract

For the topping (optional):

  • 1 cup whipped cream
  • Extra lime zest or thin lime slices for garnish

Instructions

  1. Preheat the oven: Heat the oven to 325°F and grease a 9-inch springform pan.
  2. Prepare the crust: Mix graham cracker crumbs, sugar, and melted butter. Press into the pan and bake for 8–10 minutes. Let cool.
  3. Make the filling: Beat cream cheese until smooth, add sugar, eggs, sour cream, key lime juice, lime zest, and vanilla. Pour over crust.
  4. Bake: Bake for 55–65 minutes until just set. Let cool in the oven, then chill in the fridge for at least 4 hours.
  5. Finish: Top with whipped cream and lime zest/slices before serving.

Notes

  • Use real key lime juice for best flavor.
  • Avoid overmixing to prevent cracking.
  • Store leftovers covered in the fridge for up to 5 days.
