These Key Lime Pie Bars are a tangy, creamy, and refreshing dessert with a buttery graham cracker crust and a smooth lime filling, perfect for summer gatherings.
Ingredients
- 1 and 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 large egg yolks
- 1 can (14 oz) sweetened condensed milk
- 1/2 cup key lime juice (fresh or bottled)
- 1 tablespoon lime zest
- 1/4 cup sour cream
- Whipped cream, for topping (optional)
Instructions
- Preheat oven to 350°F (175°C). Line an 8-inch square baking dish with parchment paper.
- In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press firmly into the bottom of the prepared dish to form the crust.
- Bake crust for 10 minutes, then let it cool slightly.
- In another bowl, whisk together egg yolks, sweetened condensed milk, key lime juice, lime zest, and sour cream until smooth.
- Pour the lime mixture over the cooled crust and spread evenly.
- Bake for 15-18 minutes, or until the filling is set but still slightly jiggly in the center.
- Cool at room temperature for 30 minutes, then refrigerate for at least 3 hours or until fully chilled.
- Cut into bars and top with whipped cream if desired before serving.
Notes
- Fresh key lime juice provides the best flavor, but bottled works too.
- Store bars in the refrigerator for up to 5 days.
- Chill thoroughly for clean cuts and best texture.
