Description

These Key Lime Pie Bars are a tangy, creamy, and refreshing dessert with a buttery graham cracker crust and a smooth lime filling, perfect for summer gatherings.


Ingredients

  • 1 and 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large egg yolks
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup key lime juice (fresh or bottled)
  • 1 tablespoon lime zest
  • 1/4 cup sour cream
  • Whipped cream, for topping (optional)


Instructions

  1. Preheat oven to 350°F (175°C). Line an 8-inch square baking dish with parchment paper.
  2. In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press firmly into the bottom of the prepared dish to form the crust.
  3. Bake crust for 10 minutes, then let it cool slightly.
  4. In another bowl, whisk together egg yolks, sweetened condensed milk, key lime juice, lime zest, and sour cream until smooth.
  5. Pour the lime mixture over the cooled crust and spread evenly.
  6. Bake for 15-18 minutes, or until the filling is set but still slightly jiggly in the center.
  7. Cool at room temperature for 30 minutes, then refrigerate for at least 3 hours or until fully chilled.
  8. Cut into bars and top with whipped cream if desired before serving.

Notes

  • Fresh key lime juice provides the best flavor, but bottled works too.
  • Store bars in the refrigerator for up to 5 days.
  • Chill thoroughly for clean cuts and best texture.
