Description

A hearty and comforting Kielbasa Potato Soup packed with smoky sausage, tender potatoes, and savory vegetables, perfect for a chilly day.


Ingredients

  • 1 lb kielbasa, sliced into 1/4-inch rounds
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups potatoes, peeled and diced
  • 3 cups chicken broth
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 2 tbsp chopped fresh parsley (optional, for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sliced kielbasa and cook until browned. Remove and set aside.
  2. In the same pot, add diced onion and cook until soft, about 5 minutes. Add minced garlic and cook for another 1 minute.
  3. Add diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
  4. Return kielbasa to the pot. Stir in milk, heavy cream, and smoked paprika. Simmer for another 5 minutes.
  5. Stir in shredded cheddar cheese until melted and well combined.
  6. Season with salt and pepper to taste. Garnish with fresh parsley if desired and serve hot.

Notes

  • For a thicker soup, mash some of the potatoes before adding the cream and cheese.
  • You can substitute kielbasa with smoked sausage or turkey sausage for a lighter version.
  • Add a pinch of red pepper flakes for extra heat.
