Description

Crispy on the outside and tender on the inside, these leftover mashed potato pancakes are a delicious way to repurpose leftover mashed potatoes into a savory treat.


Ingredients

  • 2 cups leftover mashed potatoes
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 1/4 cup all-purpose flour
  • 1 egg
  • 1/4 tsp garlic powder
  • Salt and pepper to taste
  • 2 tbsp vegetable oil (for frying)


Instructions

  1. In a large bowl, combine mashed potatoes, cheddar cheese, green onions, flour, egg, garlic powder, salt, and pepper. Mix until well combined.
  2. Heat vegetable oil in a non-stick skillet over medium heat.
  3. Scoop about 1/4 cup of the mixture and form it into a patty. Place in the hot skillet and flatten slightly.
  4. Cook for 3-4 minutes on each side or until golden brown and crispy.
  5. Transfer to a paper towel-lined plate to drain excess oil.
  6. Repeat with remaining mixture. Serve warm with sour cream or your favorite dip.

Notes

  • Use cold mashed potatoes for best results.
  • You can add chopped cooked bacon for extra flavor.
  • Try substituting the cheddar with parmesan or mozzarella for a different taste.
