Description

Indulge in this delightful Lemon Lush Dessert, a perfect combination of creamy layers and zesty lemon flavor. It’s a refreshing treat that’s ideal for any occasion, from potlucks to family gatherings.

Ingredients

For the Crust:

  • 1 cup all-purpose flour
  • ½ cup unsalted butter, softened
  • ½ cup chopped pecans

For the Cream Cheese Layer:

  • 1 (8 oz) package cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup whipped topping, divided

For the Lemon Pudding Layer:

  • 2 (3.4 oz) packages instant lemon pudding mix
  • 3 cups cold milk

Additional:

  • Additional lemon zest or slices for garnish (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C).
  2. Prepare the Crust: Mix flour, softened butter, and chopped pecans until crumbly. Press into a 9×13-inch baking dish and bake for 15–18 minutes until golden.
  3. Make the Cream Cheese Layer: Beat cream cheese and powdered sugar until smooth. Fold in 1 cup of whipped topping. Spread over the cooled crust.
  4. Prepare the Lemon Pudding: Whisk lemon pudding mix and cold milk until thickened. Spread over the cream cheese layer.
  5. Finish and Chill: Top with remaining whipped topping, smooth the surface, and refrigerate for at least 4 hours.
  6. Garnish and Serve: Garnish with lemon zest or slices before serving, if desired.

Notes

  • This dessert can be made a day in advance and stored covered in the refrigerator.
  • For extra crunch, lightly toast the pecans before mixing into the crust.
