Description
Loaded Smothered Beef Burritos are hearty and flavorful burritos stuffed with seasoned ground beef, beans, and cheese, then smothered in red enchilada sauce and more melted cheese for a satisfying Tex-Mex meal.

- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1/4 cup water
- 1 can (15 oz) refried beans
- 1 cup cooked rice
- 1 can (10 oz) red enchilada sauce
- 1 1/2 cups shredded cheddar cheese
- 4 large flour tortillas
- 1/4 cup chopped cilantro (optional)
- 1/2 cup sour cream (optional, for serving)
- 1/2 cup sliced green onions (optional)
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
- Add diced onion and minced garlic to the skillet; cook for 2–3 minutes until softened.
- Stir in taco seasoning and 1/4 cup water. Simmer for 3–5 minutes until sauce thickens.
- Warm the refried beans and rice slightly for easier spreading.
- Lay out tortillas and fill each with a layer of beans, rice, beef mixture, and a sprinkle of cheese.
- Roll up burritos and place seam-side down in a greased baking dish.
- Pour enchilada sauce evenly over the burritos and top with remaining cheese.
- Bake for 15–20 minutes until cheese is melted and bubbly.
- Garnish with cilantro, green onions, and serve with sour cream if desired.
Notes
- Use shredded rotisserie chicken as a beef alternative for a different flavor.
- These burritos can be made ahead and frozen before baking.
- Serve with a side of guacamole or tortilla chips for a complete meal.
