A hearty and creamy Low Carb Cheeseburger Soup that’s packed with ground beef, cheese, and vegetables, perfect for a keto-friendly meal.
Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 1/2 cup cream cheese, softened
- 1 cup cauliflower florets, chopped
- 1/2 cup diced celery
- 1/2 cup diced tomatoes (optional)
- 2 tbsp butter
- Salt and pepper to taste
- 1 tsp mustard
- 1/2 tsp paprika
- Chopped pickles for garnish (optional)
Instructions
- In a large pot, melt butter over medium heat. Add diced onion and garlic, sauté until softened.
- Add ground beef to the pot and cook until browned. Drain excess fat if necessary.
- Stir in beef broth, cauliflower, and celery. Bring to a simmer and cook until vegetables are tender, about 10 minutes.
- Reduce heat to low and stir in cream cheese until melted and well incorporated.
- Add heavy cream, shredded cheddar cheese, mustard, and paprika. Stir until cheese is melted and soup is creamy.
- Season with salt and pepper to taste. Simmer for an additional 5 minutes to blend flavors.
- Serve hot, garnished with chopped pickles if desired.
Notes
- You can substitute ground turkey for ground beef if preferred.
- For extra flavor, add a few dashes of hot sauce.
- Store leftovers in an airtight container in the fridge for up to 4 days.
