Description

A hearty and creamy Low Carb Cheeseburger Soup that’s packed with ground beef, cheese, and vegetables, perfect for a keto-friendly meal.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1/2 cup cream cheese, softened
  • 1 cup cauliflower florets, chopped
  • 1/2 cup diced celery
  • 1/2 cup diced tomatoes (optional)
  • 2 tbsp butter
  • Salt and pepper to taste
  • 1 tsp mustard
  • 1/2 tsp paprika
  • Chopped pickles for garnish (optional)

Instructions

  1. In a large pot, melt butter over medium heat. Add diced onion and garlic, sauté until softened.
  2. Add ground beef to the pot and cook until browned. Drain excess fat if necessary.
  3. Stir in beef broth, cauliflower, and celery. Bring to a simmer and cook until vegetables are tender, about 10 minutes.
  4. Reduce heat to low and stir in cream cheese until melted and well incorporated.
  5. Add heavy cream, shredded cheddar cheese, mustard, and paprika. Stir until cheese is melted and soup is creamy.
  6. Season with salt and pepper to taste. Simmer for an additional 5 minutes to blend flavors.
  7. Serve hot, garnished with chopped pickles if desired.

Notes

  • You can substitute ground turkey for ground beef if preferred.
  • For extra flavor, add a few dashes of hot sauce.
  • Store leftovers in an airtight container in the fridge for up to 4 days.
