- 4 boneless, skinless chicken breasts
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup chicken broth
- 3/4 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 tsp red pepper flakes
- 1/2 cup chopped sun-dried tomatoes (in oil, drained)
- 1 tsp dried oregano
- 1 tsp dried thyme
- Fresh basil, for garnish (optional)
Instructions
- Season chicken breasts with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat. Sear the chicken breasts for about 5-6 minutes on each side, until golden brown and cooked through. Remove and set aside.
- In the same skillet, add garlic and sauté for about 30 seconds until fragrant.
- Pour in chicken broth and bring to a simmer, scraping up any brown bits from the pan.
- Add heavy cream, Parmesan cheese, red pepper flakes, sun-dried tomatoes, oregano, and thyme. Stir to combine and let simmer for 3-4 minutes.
- Return the chicken to the skillet, spoon sauce over the top, and simmer for another 5 minutes until the chicken is heated through and coated in sauce.
- Garnish with fresh basil if desired and serve hot.

- This dish pairs well with pasta, mashed potatoes, or a side of roasted vegetables.
- You can substitute chicken thighs if preferred.
- Use freshly grated Parmesan for best flavor and texture.
