Description
A flavorful Mediterranean chicken marinade made with olive oil, lemon juice, garlic, and herbs, perfect for grilling or baking.
Ingredients
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp dried thyme
- 1/2 tsp ground cumin
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp crushed red pepper flakes (optional)
- 2 tbsp chopped fresh parsley
- 1.5 lbs boneless, skinless chicken breasts or thighs
Instructions
- In a medium bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, cumin, paprika, salt, black pepper, and red pepper flakes.
- Stir in chopped parsley.
- Place chicken in a large resealable plastic bag or shallow dish.
- Pour the marinade over the chicken, ensuring all pieces are well coated.
- Seal the bag or cover the dish and refrigerate for at least 30 minutes, ideally 2–4 hours or overnight for best flavor.
- Remove chicken from marinade and discard the used marinade.
- Grill or bake chicken until fully cooked (internal temperature reaches 165°F/75°C).
- Serve hot with your favorite Mediterranean sides.
Notes
- Marinate longer for deeper flavor, but not more than 24 hours.
- Great for grilling, baking, or pan-searing.
- Can also be used with chicken wings or drumsticks.
- Pair with tzatziki sauce and a Greek salad for a full meal.
